Lamb and Quinoa Salad

💡 Quinoa is naturally gluten-free – perfect for those with coeliac disease. If gluten isn’t an issue, you can substitute quinoa with cous cous. Using lean cuts of lamb will provide biologically available (absorbed) protein (+ B12, iron & zinc) and minimal/no saturated fats.


Ingredients

🍽 Serves: 1 | ⏱ 30 minutes

  • 1/4 cup raw quinoa

  • 100 – 120g lamb fillet or steak

  • 1 – 1.5 cups baby spinach

  • 1/2 red capsicum sliced

  • 1 bunch of mint leaves

  • 30-40g feta

  • 1 tsp olive oil

  • 2 tsp vinegar

  • Pinch of sugar

  • Cracked pepper

  • 1 lemon wedge (to serve)

Method

  1. Cook quinoa as per packet instructions (this takes about 25 min)

  2. While quinoa is cooking combine all ingredients for the dressing and set aside

  3.  Heat oil and cook lamb on a grill pan (10 minutes for medium-rare)

  4. Cover & set aside to rest for 5 min, then slice

  5.  Combine all ingredients in a bowl and gently toss to mix

  6.  Serve with lemon wedges if desired
